At South Texas Chile Company, we're on a mission to grow ALL THE CHILES!

From the nobel Jalapeño, to scorchers like the Carolina Reaper and Bhut Jolokia (Ghost Pepper), we're working hard to grow beautiful, healthy chile plants that will produce lots of chiles for our Retail and Wholesale customers. We plant more seeds nearly every week, so come visit today, and see what's flowering (first come flowers, then come chiles)!

Our most popular varieties are the Chile Pequin and Chiltepin (more commonly known locally as Chile del Monte). These are wild chiles, often referred to as "Bird Peppers," because birds are quick to eat these small chiles and spread the seeds. You'll find Pequin and Del Monte plants growing wild from Northern Mexico to the Southwest US. Two interesting facts: First, birds do not "feel the burn" like we do; they're not affected by Capsacinoids (the oils in chile that "burn" us). And secondly, despite popular belief, wild chiles DO NOT have to go through a bird to germinate. We grow both Pequin (slightly elongated) and Del Monte (round) from seed, but they sell out quickly. We also have Seasonal Vegetable Starters (small, established plants to jump-start your garden). For families and restaurants alike, growing more of your own food is always a good thing, and we're here to help!

Chiles

Whether you call them Chiles, Peppers, Chilies or even Chilis, chiles are a critical component to many cuisines around the world. Known for their various levels of "heat" or "pungency," (caused by the capsaicinoids they contain), a chile pepper (in any number of forms: fresh, roasted, dried, etc.) can add depth and character to an otherwise average dish.

The official measurement of this "heat" is called the Scoville Scale, and ranges from 500 for Bell Pepper to over 3,000,000 for Pepper X, the hottest chile currently documented. In fact, Law Enforcement pepper spray is made from chiles that tip the Scoville scale, including Pepper X, Carolina Reaper and Bhut Jolokia (Ghost). Whether you prefer Wild or Mild, you'll find something at South Texas Chile Co.

We grow LOTS of types of chiles, including Jalapeño, Serrano, Habanero, Poblano, Guajillo, Cayenne, Thai, Carolina Reaper, Ghost Peppers, Basket of Fire, Pot-a-Peño, just to name a few. Our chile plants range in size from 6" to over 24" tall, and many are starting to flower or already have chiles on them. These varieties are $6 each.

Looking for something you don't have to put in the ground?

We have two awesome chile varieties that live in hanging baskets. These varieties are $15 each and come in 10" hanging baskets.

Basket of Fire were specifically developed by Texas A&M to live in a hanging basket, and produce tons of delicious, medium-heat chiles.

Pot-a-Peño are also a determinate (meaning they only reach a certain height) variety of Jalapeño, that also lives in a hanging basket, and doesn't need to be put in the ground or a larger pot... but you can if you want to.

About Las Majadas Academy & South Texas Chile Co.

In May of 2020, we purchased the storied Caldwell Jungle Nursery in Raymondville, TX.

Our pre-pandemic goal was to move our Special Needs program, Las Majadas Academy (formerly La Jarra Academy) to the nursery for our 2nd Annual Summer Camp. Of course, COVID-19 threw us a pretty big curveball.

Prior to COVID-19, La Jarra Academy provided life-skills training and social opportunities (among other activities) for individuals with Intellectual Disabilities. By moving our program to a working plant nursery, we will be able to offer job training, and even more social activities to our students. We're hopeful that by Spring 2022, we'll be able to welcome our wonderful students to the nursery!

Our longterm plans include building a small housing development behind the nursery for participants in our program who are ready for group and semi-independent living.

We appreciate all the wonderful community support and interest in our program, and look forward to serving South Texas and the Rio Grande Valley for many, many years to come!

Spotlight: Romeo y Julieta

Romeos AKA Arrowhead plant (Syngonium phodophyllum) are available in 1 Gallon containers, as well as mixed with Julietas in 10" hanging baskets.

Julietas AKA Pothos or Ivy (Epipremnum aureum) are available in both Variegated (Golden Pothos) and solid Green. They are available in 5" pots, 10" baskets and mixed with Romeos, also in 10" hanging baskets.

Seeds

Heirloom vs. Hybrid

Heirloom, or Open-Pollenated seeds are pollenated by insects and wind, and typically produce consistently from season to season. These varieties have indeed been around for decades and the fruit (general term for what a plant produces, eg. chiles, beans, squash, etc. are all refered to as the "fruit" of the plant) is generally consistent year after year.

Hybrid seeds are specially bred to posses certain traits (typically size, appearance, yield or hardiness to temperature or pests), but the fruit they produce can vary from year to year. It is typically not recommended to save seeds from hybrid plants for this reason.

Indeed, cross-breeding of plant cultivars (varieties) has been around since we as humans began to harvest fruits and vegetables.

It all starts with a seed.

We select the finest Heirloom and Hybrid seeds to grow plants that will thrive in the South Texas heat, and produce healthy, consistent chiles, veggies and fruit.

Most of our seasonal Veggie Starters are sown from these hand-selected seeds to give our customers a jumpstart on their garden. Experienced and Novice gardeners alike enjoy being able to skip the process of starting from the very beginning, and purchasing plants that already have a head-start. However, if you'd rather start from scratch and plant seeds yourself, we've got you covered there too.

Whether it's wild chiles or common veggies, we have lots of seeds, and can sell you a few or a lot.

Our nursery covers approximately two (2) acres, but we also have an area behind the nursery where we'll be hosting fun and exciting events, like Flea Markets (Pulgas), Farmer's Markets, Fundraisers, Seasonal Activities, and maybe even the occassional concert.
